William Schmidt’s 1892 book, The Flowing Bowl: What and When to Drink, offers a version of The Gem. The Gem. In a mixing glass, combine the juice of a lime, a little pineapple syrup, and a spoonful of sugar. Stir until the sugar is dissolved. Add ½ drink of Santa Cruz rum and ½ drink of brandy. Mix these ingredients thoroughly. Fill a glass with ice and mix again. Strain the mixture into a fine glass. Garnish the drink with a slice of lemon and a dusting of cinnamon.
