Ingredients

2 1/2 oz Sake
3/4 oz Triple sec
1/2 oz Lime juice
2 drop Saline solution 4:1
Xanthan gum (E415)

How to make

Serve in a coupe glass

Prepare

  1. 1 Select and pre-chill a COUPE GLASS.
  2. 2 Prepare garnish of lime wedge.

Method

  1. 3 DRY BLEND (without ice) first 4 ingredients on slow setting and gradually add Xanthan gum while continuing to blend.
  2. 4 Add ⅔ of a 7oz scoop of crushed ice and BLEND again.
  3. 5 POUR into chilled glass.

Garnish

  1. 6 Garnish with lime wedge on rim.

History

A "Margarita" without an agave spirit is worthy of debate, but this recipe demonstrates sake's versatility in cocktails.

Adapted from a signature cocktail served at the China Rose Chinese restaurant in Rhinecliff, USA, until it closed circa 2016. Niki La, a fellow Discerning Drinker and patron of the restaurant, shared the recipe with us in 2023, calling it "the best sake drink I've ever had."
