Flavour profile

History

Lime and mint freshness with gin botanicals and subtle anise notes. The drink has an almost pearl-like appearance.

This cocktail, created in 2006 by Audrey Saunders at the Pegu Club in New York City, USA, pays homage to late 1800s French architecture. It reflects the fashionable absinthe-sipping era of Paris, represented here by pastis.
