History

The Explorer's character is heavily influenced by the choice of sherry. Cream sherry, as called for in the original recipe, enhances the amaretto's marzipan notes, yielding a richer after-dinner drink. Conversely, fino sherry renders the cocktail drier, more suited as an apéritif, with prominent nutty notes. Amontillado sherry, as used in this rendition, emphasizes butterscotch and is best served on the rocks in an old-fashioned glass as a late-night choice. This is an exceptionally adaptable equal-parts recipe, designed to please diverse tastes.

This cocktail was discovered in 2019 at Sandals Resort in Barbados. It is an adaptation of a recipe made with Harvey's Bristol Cream Sherry instead of Amontillado sherry.
