History
Fruity notes of orchard fruits with light grassy notes. Easy to sip and relatively low in alcohol.
This drink is adapted from a 2002 recipe by Kevin Connelly, who named it an escalator, referencing the rhyming slang 'apples and pears' for 'stairs' due to the shaking method. Originally based on Vilmos Körte Pálinka, Kevin stated in April 2026 that due to sourcing difficulties, he had amended the recipe to use 30ml Giffard Poire William liqueur, 15ml Zubrowka, and 60ml apple juice. Prior to April 2026, the recipe had called for 30ml (1oz) Poire William eau-de-vie, 15ml (½oz) bison grass vodka, 60ml (2oz) apple juice, and 5ml (barspoon) sugar syrup. As Kevin recommended, the sugar syrup was omitted, and sweet Poire William liqueur was introduced, with its potency enhanced by retaining a measure of Poire William eau-de-vie.
