Ingredients
2 oz Vodka
60 Unspecified
30 Unspecified
1 oz Kiwi fruit puree
1 oz Whipping cream
1 oz Egg white (pasteurised)
Top up with Soda water
How to make
Serve in a collins glass
- 1 SHAKE first 6 ingredients with ice and strain into ice-filled glass
- 2 TOP with soda water poured from a height to create a frothy head
- 3 Serve with straws
- 4 <strong>Special ingredient #1</strong> = Lemon sherbet
- 5 Blend the following for a couple minutes and fine strain
- 6 600g Caster sugar
- 7 600g Super strained lemon juice
- 8 20g Lemon zest (removed from fruit with Microplane grater)
- 9 5g Maldon sea salt
- 10 <strong>Special ingredient #2</strong> = Rose water and kiwi syrup
- 11 Blend the following and bottle
- 12 5g malic acid
- 13 100ml Catron kiwi liqueur
- 14 100ml Merlet pear liqueur
- 15 100ml Money musk coconut
- 16 25ml Absinthe
- 17 5g Maldon sea salt
- 18 100ml Orgeat syrup
- 19 50ml Campari
- 20 200ml Sugar syrup (1:1)
