Cucumber Rum Collins

Ingredients
1 inch Cucumber (fresh)
2 oz Light white rum
3/4 oz Lemon juice
1/2 oz Sugar syrup 'rich' (2:1)
3 drop Saline solution 4:1
2 oz Soda water
How to make
Serve in a collins glass
Prepare
- 1 Select and pre-chill a COLLINS GLASS.
- 2 Prepare garnish of cucumber ribbon.
Method
- 3 MUDDLE cucumber in base of shaker. (Ideally, cut skin from the cucumber log before chopping).
- 4 Add next 4 ingredients and SHAKE with ice.
- 5 FINE STRAIN into ice-filled glass.
- 6 TOP with soda and briefly stir.
Garnish
- 7 Garnish with cucumber ribbon around inside of glass.
