1 1/2 oz Cognac (brandy)
1/2 oz Maraschino liqueur
1/3 oz Pineapple rum
2/3 oz Pineapple juice
1/12 oz Sugar syrup 'rich' (2:1)
2 dash Creole bitters
2 drop Saline solution 4:1
1/2 oz Brut sparkling wine

How to make

Serve in a coupe glass

Prepare

  1. 1 Select and pre-chill a COUPE GLASS.
  2. 2 Prepare garnish of pineapple wedge and Luxardo Maraschino Cherry.

Method

  1. 3 SHAKE all ingredients with ice.
  2. 4 FINE STRAIN into chilled glass.

  1. 5 Garnish with pineapple wedge and maraschino cherry.

History

Pineapple rum harmonizes better with the other ingredients than the original pisco augmentation. A splash of fizz was added.

This is the most recent adaptation, dated August 2026, of W. C. Whitfield's Club Cocktail, featured in his 1939 book Just Cocktails. A prior iteration utilized pisco with the following proportions: 60 ml Cognac 7.5 ml Pisco 15 ml Maraschino liqueur 22.5 ml Pineapple juice 2 dash Peychaud's/Creole-style bitters
