Serve in a old-fashioned glass
Prepare
- 1 Select and pre-chill an OLD-FASHIONED GLASS.
- 2 Prepare garnish of lemon zest twist.
Method
- 3 Fill glass with ice, POUR in absinthe, top up with water and leave the mixture to stand in the glass.
- 4 Separately, STIR bourbon, cacao, sugar and bitters with ice.
- 5 Discard contents of glass (absinthe, water and ice) and STRAIN stirred cocktail into empty absinthe-coated glass.
Garnish
- 6 EXPRESS lemon zest twist over the cocktail and discard.
