Ingredients

1 1/3 oz Cognac (brandy)
1/6 oz Pedro Ximénez sherry
1/6 oz Parfait amour liqueur
1/6 oz Sugar syrup 'rich' (2:1)
1 dash Aromatic bitters
1/2 oz Chilled water
1 fresh Egg yolk
Top up with Brut sparkling wine

How to make

Serve in a flute glass

  1. 1 SHAKE first 7 ingredients with ice and strain back into shaker
  2. 2 DRY SHAKE (without ice) and fine strain into chilled glass
  3. 3 TOP with champagne.

This drink is complex and dry, with faint notes of rich, raisiny sherry and floral hints.

This drink is based on a 2015 creation by Chris Pawar, who was working at The Luggage Room Bar in London, England, at the time. Chris Pawar's initial recipe specified Martell Cordon Bleu cognac.
