Caffè Leccese, also known as Caffè alla Salentina, is an iced coffee originating from Lecce, a city in the southern Italian region of Puglia. Antonio Quarta, a coffee roaster, is said to have originated it there. Traditionally, Caffè Leccese is prepared with espresso and almond syrup. It is served 'soffiato' (blown), meaning a cup of hot espresso and a separate glass containing syrup and ice cubes are provided for the diner to combine. Alternatively, it can be prepared 'shakerato' (shaken), where the ingredients are shaken together and then strained into a glass filled with ice.
