Ingredients

1 2/3 oz Aged rum (6-10yr)
1 1/2 oz Red quinquina e.g. Dubonnet, Byrrh
1/6 oz Grand Marnier
1/24 oz Red bitter liqueur

How to make

Serve in a martini glass

  1. 1 Select and pre-chill a MARTINI GLASS.
  2. 2 Prepare garnish of skewered Luxardo Maraschino Cherry.

  1. 3 THROW all ingredients with ice.
  2. 4 STRAIN into chilled glass.

History

The recipe for Boadas's signature cocktail is not known and is unlikely to be shared. This is an interpretation, and given Don Miguel Boadas Parera's Cuban origins, it is fitting to use a well-aged Cuban rum (Havana Club 7 was used in experimentation). Orange curaçao was tried but found to be less suitable than the richness of a cognac-orange liqueur.

This is adapted from the signature cocktail created in 1933 by Don Miguel Boadas Parera, around the time his bar in Barcelona, Spain, first opened. The original recipe featured equal parts Cuban rum (lightly aged, around 3 years old), Dubonnet Red, and orange curaçao. While Boadas' performance of making the drink was theatrical, the original cocktail is not considered great. However, following a change of ownership at Boadas in 2022, the recipe was updated to create a much more enjoyable drink. A precious original glass from the Boadas collection was supplied for the photography of this signature cocktail.
