History

A bittersweet chocolate cherry with a gin accent.

The "Sour Cherry" was created in 2023 by Ciarrai Kelly and Adam Montgomerie at Hawksmoor in Manhattan, New York City. Adam's recipe uses 5ml of acid-adjusted cherry juice, which he makes with 700g cherry juice, 15g malic acid and 30g citric acid. The present version is more bittersweet cherry and Negroni-like, leading to the change in name.
