Ingredients

7 dried Clove
2 barspoon Honey
3 oz Boiling water
2 1/2 oz Tawny port
1 oz Orange juice

How to make

Serve in a toddy glass

Prepare

  1. 1 Select and pre-heat a TODDY GLASS.
  2. 2 Prepare garnish of grated nutmeg.

Method

  1. 3 Use a heatproof glass and PREHEAT by filling with boiling water.
  2. 4 MUDDLE cloves in the base of shaker.
  3. 5 Add boiling water and STIR in honey and other ingredients.
  4. 6 FINE STRAIN into preheated glass.

Garnish

  1. 7 Dust with freshly grated nutmeg.

History

A warming, flavorful variation on mulled wine.

This is a simplified version of an 18th-century drink called Negus, which was reputedly favored by the writer Dr. Johnson. The traditional Negus recipe starts with an orange studded with cloves and then roasted.
