Ingredients

1 oz Amaro (e.g. Braulio)
1 oz Rabarbaro liqueur
3/4 oz Lime juice
1/2 oz Gomme syrup

How to make

Serve in a coupe glass

Prepare

  1. 1 Select and pre-chill a COUPE GLASS.
  2. 2 Prepare lime slice wheel (ideally dehydrated) for garnish.

  2. 4 FINE STRAIN into chilled glass.

Big and bittersweet, this cocktail is bursting with herbal and citrus flavours. More of a digestivo than an aperitivo.

This drink, adapted from a 2020 recipe by Stephanie Andrews for Billy Sunday in Chicago, Illinois, USA, uses Sfumato Rabarbaro as specified in the original. It is named for the bar where it was created, which itself is named after William Ashley 'Billy' Sunday (1862-1935). Sunday was a popular outfielder in baseball's National League during the 1880s before becoming America's most influential evangelist in the early 20th century. His sermons were influential in the adoption of the Eighteenth Amendment in 1919, which led to Prohibition.
