Prepare
- 1 Select and pre-chill a COUPE GLASS.
- 2 Prepare garnish of orange zest twist (flamed).
Method
- 3 EXPRESS a flamed orange zest twist into empty chilled glass to line the inside with smoky oils.
- 4 STIR other ingredients with ice.
Garnish
- 5 STRAIN into pre-prepared glass.
- 6 EXPRESS flamed lemon zest twist over cocktail and use as garnish.

History
Burnt orange oils add smokiness, complexity, and balance to this bittersweet drink. A perfect after-dinner choice.
Created in 2008 by Paul Mathew at The Hide, London, this drink was originally made for the "Free Spirit" cocktail competition at the Boutique Bar Show. It is based on the classic Fin de Siècle, but uses rum in place of gin. Paul's original recipe called for: 45ml Diplomatico Reserva Exclusiva, 15ml Antica Formula, 10ml Amer Picon and Palo Cortado Viejo sherry.
