2 oz Manzanilla sherry
1/3 oz Triple sec
1/3 oz Orange juice
1/12 oz Pimento dram
1 dash Orange bitters

Serve in a coupe glass

  1. 1 Select and pre-chill a COUPE GLASS.
  2. 2 Prepare garnish of skewered green olives.

  1. 3 SHAKE all ingredients with ice.
  2. 4 FINE STRAIN into chilled glass.

History

Dry sherry with an orange flavour and subtle pimento spice.

From Harry Craddock's 1930 The Savoy Cocktail Book comes this adaptation: "BALM COCKTAIL. (6 people) ½ Glass Orange Juice. ½ Glass Cointreau. 3 Glasses Sherry. 1 Dash Orange Bitters. 2 Dashes Pimento Dram Liqueur. Fill up the shaker with cracked ice, shake and serve with an olive."
