Ingredients

1 swath Lemon peel
1 2/3 oz Amaretto liqueur
3/4 oz Lemon juice
3/4 oz Orange juice
1/2 oz Egg white (pasteurised)
2 dash Aromatic bitters
3 drop Saline solution 4:1

How to make

Serve in a sour or martini/coupette glass

Prepare

  1. 1 Select and pre-chill a SOUR OR MARTINI/COUPETTE GLASS.
  2. 2 Prepare garnish of orange zest twist (coin-sized).

Method

  1. 3 REGAL SHAKE all ingredients (including lemon zest) and strain back into shaker.
  2. 4 DRY SHAKE (without ice) to emulsify.
  3. 5 FINE STRAIN into chilled glass.

Garnish

  1. 6 EXPRESS orange zest twist over cocktail and float as garnish.

History

This almond sour has zesty oils and citrus juice to provide balance.

Among the many classic Stone Sours, this particular version is arguably the most well-known. Cocktail historian David Wondrich indicates that the earliest known mention of an Amaretto Stone Sour appeared as the "Drink of the Week" in a 1982 newspaper advertisement for Wisconsin's Diamond Supper Club in Menomonie. Six years later, the Amaretto Stone Sour was featured as one of seven Stone Sours in the 1988 publication *Sardi's Bar Guide*, authored by Vincent Sardi Jr. and George Shea. The fundamental nature of a stone sour involves a standard sour base augmented with orange juice. "AMARETTO STONE SOUR 1 teaspoon superfine sugar 1 ounce lemon juice, preferably freshly squeezed 2 ounces amaretto* 2 ounces orange juice, preferably freshly squeezed ½ slice orange or lemon for garnish 1 maraschino cherry for garnish Combine ingredients with ice cubes in a cocktail shaker. Shake. Strain into cocktail glass, or empty contents, ice cubes and all, into an Old-Fashioned glass and serve on the rocks. Garnish with ½ slice orange or lemon and a maraschino cherry. *Preferred Ingredients: amaretto: Amaretto di Saronno. See Liqueur (page51); fresh-squeezed orange and lemon juices."
