History

Appreciation for kummel is required for this long-lost classic. If you do appreciate kummel, the only question is, do you prefer this cocktail with more or less Scotch whisky?

Harry Craddock's 1930 The Savoy Cocktail Book offers a recipe for the Alice Mine Cocktail. It calls for equal parts Italian Vermouth and Russian Kummel, with 2 dashes of Scotch Whisky, shaken and strained into a cocktail glass. Stanley M. Jones, in his 1977 Jones' Complete Barguide, presents a variation using bourbon whiskey. He also lists a Scotch whisky version, which he calls simply "Alice". The "Alice" recipe from Jones' book is: Stir 3/4 oz Scotch, 3/4 oz Kummel, and 3/4 oz sweet vermouth in a cocktail glass. Jones also lists the "Alice Mine" as: Stir 1 oz Grand Marnier, 3/4 oz gin, 1/2 oz dry vermouth, 1/4 oz sweet vermouth, and 1 dash Angostura bitters in a cocktail glass. A further variation is noted: 3/4 oz Bourbon, 3/4 oz Kummel, and 3/4 oz sweet vermouth.
