Ingredients

2/3 oz Absinthe
2/3 oz Lime juice
2 oz Chilled water
5/12 oz Sugar syrup 'rich' (2:1)
1 dash Aromatic bitters

How to make

Serve in a coupe glass

Prepare

  1. 1 Select and pre-chill a COUPE GLASS.
  2. 2 Prepare garnish of lime zest twist.

  1. 3 SHAKE all ingredients with ice.
  2. 4 FINE STRAIN into chilled glass.

  1. 5 Express lime zest twist over the cocktail and use as garnish.

History

This absinthe cocktail resembles an absinthe sour, with lime juice added to the classic absinthe, sugar, and water.

This recipe is adapted from the first entry in "Jimmy's" 1932 pocket cocktail book, The Green Cocktail Book. The original proportions are respected, with the addition of "sugar to taste," as Jimmy states. Therefore, 10ml to 12.5ml of sugar is advised, depending on the limes and palate. ABSINTHE 1 part Absinthe 1 part Lime Juice 3 parts Water 1 dash Angostura Bitters per cocktail Sugar to taste.
